Chicken Quesadillas

This is one of Luke and my favorite easy dinners. Simple to make, and you can use leftover chicken! For two people, each eating one quesadilla (Luke eats 2), you'll need:

One half chicken breast, cut into strips
About 1/2 c. to 1 c. grated cheese, cheddar or whatever you'd like
Taco seasoning or hot sauce
jalepenos (optional)
Four flour tortillas (I use "burrito" size)
Taco sauce or salsa for dipping (optional)

Heat about 1 T. of butter and a drop of olive oil in a small skillet over medium. Saute the chicken until browned and cooked through. When almost done, either sprinkle with taco seasoning, or hot sauce.



Heat about 1/2 T. of butter and a drop of olive oil in a large skillet over medium-low until it looks bubbly, and the skillet feels hot when you hold your hand over it.

Start to layer the quesadilla: Dip one tortilla in butter on just one side and then put it on a plate. Place another tortilla in the skillet, put enough cheese to cover the bottom, then add half the sauteed chicken, some hot sauce (if desired), and other toppings, like jalepenos. Top with a little more cheese, then place the tortilla you dipped in butter on top, butter side up.



This is layering the quesadilla. The chicken on this quesadilla is leftovers (just heat in butter and hot sauce or taco sauce).



Cooking the quesadilla. When the first side looks golden brown, flip it over. Use the biggest turner you can find!



The finished quesadilla! Cut with a pizza cutter or sharp knife.
