Cheap Meals for Two Starring Chicken!

I buy a lot of chicken. It's cheap, it's versatile, and it tastes good. And there's a LOT you can do with a little bit of chicken! Here are some of Luke and my favorites. A lot of these are no-recipe meals, and a lot of these have recipes that will be posted soon...stay tuned!


Chicken Quesadillas
I make these with either one chicken breast half, cut in strips and sauteed in butter and hot sauce, or with leftover roasted shredded chicken, heated up in butter and hot sauce over medium heat. I don't have a quesadilla maker, but I make them in a skillet. Recipe coming soon, complete with how-to photographs!

Italian Chicken
That's what I call this stand-by recipe of mine. For two people, one half chicken breast, chopped and sauteed in olive oil, seasoned with garlic salt, onion powder, lemon pepper and cayenne. Put on a pot of pasta (short pasta goes best with this), saute a mix of vegetables (I usually do broccoli, snap peas, and green beans), and then fill a large soup bowl with pasta, then the veggies and chicken. Top with Parmesan, and, if you're Luke, hot sauce.

Chicken & Spinach Alfredo
Yum!

Pasta Chicken
Luke says I need a new name for this. Any suggestions? It's basically just a large serving of pasta, a chicken breast half chopped and sauteed in olive oil, seasoned with garlic salt, onion powder and lemon pepper, and then topped with homemade spaghetti sauce. An easy, standby dinner.

Chicken & Rice-A-Roni
I don't used box mixes very much, but this meal is handy when you don't have a lot of time, or you're morning sick and not wanting to be in the kitchen all night! I pick a Rice-A-Roni (we like Herb & Butter, and Four Cheese the best), then saute a half chicken breast, cut into pieces, over medium heat. Season to match the Rice-A-Roni you picked, and serve with sauteed or steamed vegetables.

Prosciutto, Pea & Chicken Pasta
I've got to post the recipe for this soon! It's good! It's a quick and easy dish using a half chicken breast, with a cream sauce and a little prosciutto for kick! I use snap peas instead of regular peas too.

These are making me hungry! The only name I can think of for your Pasta Chicken is Chicken Spaghetti. But it seems like it's more than that?

Yeah, it pretty much is chicken spaghetti, except I don't use spaghetti pasta, I usually use short pasta. Maybe I'll give it some crazy long name, like "Chicken-Spaghetti-But-Not-Using-Spaghetti." ;) Nah, just kidding. ;)

I love to boil up, bake up, or crockpot cook a chicken and use it for so many things like chicken spaghetti, chicken enchiladas, hot chicken salad, and so many more. :D

One of my favorite cheap & easy chicken meals is a pkg of thighs & legs (breasts work too) in the crock pot, pour abut 1/3 bottle of BBQ sauce over it and cook on high for about 3 hours. The BEST fall off the bone chicken! Hmmm...I am thinking we will have that for dinner this weekend!
