Mocha Cupcakes




Here's the cupcake recipe I promised! It's one of Luke's favorites and turns our really well!

Mocha Cupcakes

1 1/2 c. flour
1 c. sugar
1/3 cocoa
1 t. baking soda
1/2 t. salt
2 eggs
1/2 c. cold brewed coffee
1/2 c. vegetable oil
3 t. cider vinegar
3 t. vanilla extract

Frosting:
6 T. chocolate chips
1/3 c. butter, softened
2 c. powdered sugar
1-? T. cold brewed coffee (enough to make icing smooth)


Combine flour, sugar, cocoa, baking soda and salt.
In another bowl, whisk eggs, coffee, oil, vinegar and vanilla. Add to dry ingredients.

Fill paper-lined muffin cups three-quarters full. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean. Cool cupcakes completely.

For the frosting, melt chocolate chips; stir until smooth. Beat in butter. Gradually beat in powdered sugar and coffee. (Start off with 1 tablespoon, and add until the frosting is smooth and spreadable.)

Makes 1 dozen cupcakes

*mouth watering* It's good enough to possibly even get me in the kitchen to make it! Of course, that is if I can't talk my mom into it. *halo* ;)

I just did see that this was from Taste of Home - don't you just love that magazine? :-) My mom gave me a gift subscription last year, and I have really been enjoying it (which is saying something, because I don't really like to cook).
