Toffee Recipe!

Just in case y'all were wondering, the toffee DID turn out, and was a pretty big hit! ;) I thought maybe some of you would like to try it out...it's a very simple recipe, easy to make and pretty much always turns out!


English Toffee

2 sticks of butter (or soy butter)
1 c. sugar
Small package of slivered almonds, if wanted
1 package chocolate chips (the darker the chocolate, the better!)


Melt the butter and sugar together over medium heat. Add the almonds, and cook until bubbly, and it will start to turn brown. Pour into a pan, and while hot, sprinkle the chocolate chips over the top. As they melt, spread out the chocolate. Refrigerate. When the toffee has set, use a knife to bust into pieces. This is best kept in the refrigerator.




There are a few "tricks" to this recipe that I've found...
1) Use a disposable aluminum pan! The first time I made this, I used a glass pan that I buttered...bad idea. It's impossible to remove from one of these. I usually use a flat pan, 11x9 or a similar size.
2) A metal pot works better than a non-stick pot...but as SOON as you pour that toffee into the pan, put that pot in the sink, run HOT water into it and put dish soap in there! Otherwise, you'll be scrubbing for a while. :P
3) The "brown" color isn't dark, but more of a tan-brown. Once it gets "foamy" and turns a funny color, it's done. It might take a try or two to find the right moment it's done, but don't despair!
