Easy French Fries

These French fries are super easy, and Luke says they're some of the best he's had. That's saying something, because Luke loves French fries. I make these all the time and they are so easy it's almost not fair! You can reduce or increase the cayenne pepper (or replace it with Mrs. Dash if you'd rather a more mild flavor) to taste, and use pretty much any kind of potato. I love to use the little red potatoes; they cook quickly and have great flavor. This recipe is for 2 people, you can obviously make more.

French Fries

3 Idaho potatoes or 5 to 6 small potatoes
1/2 t. cayenne
About 1 T. kosher salt, more to taste if needed
Olive oil

Cut the potatoes into 1/4 inch sticks. Place on a large rimmed baking sheet, and sprinkle salt and cayenne over. Drizzle with olive oil and toss to coat. Stick into a preheated 400 degree oven, and turn them once about 10 minutes in. They take 20 to 30 minutes to cook, depending on how thick you cut the fries and the type of potato. Take them out when they're crispy and golden. Toss with more salt if needed, and enjoy!
